Cook the noodles according to package instructions. Drain and set aside.
Heat olive oil in a pan over medium heat. Add the onion and sauté until soft.
Add garlic and cook for 30 seconds until fragrant.
Stir in the sliced mushrooms and cook until they release moisture and turn golden.
Add tomato sauce, tomato paste, oregano, basil, salt, and pepper. Simmer for 5–7 minutes.
Add the cooked noodles to the sauce and toss well until evenly coated.
Adjust seasoning and sprinkle with red pepper flakes if desired.
Garnish with fresh herbs and serve hot.
