  • 4 artichoke hearts (fresh or frozen)
  • 2 medium potatoes (diced)
  • 1 carrot (diced)
  • ½ cup green peas
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • 1 clove garlic (finely minced, optional)
  • Salt to taste
  • Fresh dill or parsley (optional)

Method
 

  1. Boil potatoes and carrots in lightly salted water for 8–10 minutes until tender. Add peas during the last 2 minutes, then drain and let cool.
  2. Cook artichoke hearts in boiling water with lemon juice for 8–10 minutes until soft. Drain and slice.
  3. In a large bowl, combine artichokes, potatoes, carrots, and peas.
  4. Whisk olive oil, lemon juice, garlic, and salt in a small bowl.
  5. Pour dressing over the salad and gently toss.
  6. Garnish with fresh dill or parsley and serve chilled or at room temperature.
