Method
- Heat olive oil in a small pan over medium heat.
- Add spinach and sauté for 30–40 seconds until wilted.
- Crack the egg into the pan and gently mix with spinach.
- Season with salt and black pepper, cook until the egg is softly set.
- Toast the bread until golden.
- Spoon the egg and spinach mixture onto the toast.
- Sprinkle cheese on top and let it melt.
- Finish with red pepper flakes if desired and serve warm.
