Method
- Boil potatoes and carrots in lightly salted water for 8–10 minutes until tender. Add peas during the last 2 minutes, then drain and let cool.
- Cook artichoke hearts in boiling water with lemon juice for 8–10 minutes until soft. Drain and slice.
- In a large bowl, combine artichokes, potatoes, carrots, and peas.
- Whisk olive oil, lemon juice, garlic, and salt in a small bowl.
- Pour dressing over the salad and gently toss.
- Garnish with fresh dill or parsley and serve chilled or at room temperature.
