  • 1/4 cup fresh spinach (chopped)
  • 2 tablespoons grated mozzarella or cheddar cheese

Method
 

  1. Heat olive oil in a small pan over medium heat.
  2. Add spinach and sauté for 30–40 seconds until wilted.
  3. Crack the egg into the pan and gently mix with spinach.
  4. Season with salt and black pepper, cook until the egg is softly set.
  5. Toast the bread until golden.
  6. Spoon the egg and spinach mixture onto the toast.

  8. Finish with red pepper flakes if desired and serve warm.
