  • 2 salmon fillets (about 150 g each, cut into chunks)
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt & black pepper, to taste
  • 2 large eggs
  • 1/2 cup canned chickpeas (rinsed & drained)
  • 1 handful baby spinach or chopped green pepper
  • Optional: chili flakes or lemon juice

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add salmon chunks, season with cumin, paprika, salt, and pepper.
  3. Cook salmon for 4–5 minutes, turning once, until lightly crispy outside.
  4. Add chickpeas and spinach (or peppers) to the pan and cook 1–2 minutes.
  5. Push everything to the side and crack eggs directly into the pan.
  6. Cook eggs to your liking (sunny-side or lightly scrambled).
  7. Finish with chili flakes or a squeeze of lemon if desired and serve hot.
