  • 2 fish fillets (cod, sea bass, or salmon)
  • 1 cup baby spinach
  • 1 cup arugula (rocket)
  • 1 small zucchini, thinly sliced
  • 1 small carrot, julienned
  • ½ cucumber, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper, to taste

Method
 

  1. Season the fish fillets with salt, pepper, and lemon zest.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Cook the fish for 4–5 minutes per side until flaky and lightly golden.
  4. In a large bowl, combine spinach, arugula, zucchini, carrot, and cucumber.
  5. Add lemon juice and gently toss the greens.
  6. Place the cooked fish on top of the veggie and greens bowl.
  7. Finish with fresh dill and parsley before serving.
