  • 400 g chicken breast (cut into small bite-size cubes)
  • 1 tablespoon olive oil
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 small zucchini (half-moons)
  • 1 small carrot (thinly sliced)
  • 2 garlic cloves (minced)
  • 1 tablespoon soy sauce
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • Salt (to taste)
  • 1 tablespoon water or chicken broth

Method
 

  1. Heat olive oil in a large pan or wok over medium-high heat.
  2. Add chicken cubes and cook for 5–6 minutes until lightly golden.
  3. Add garlic and red onion, sauté for 1 minute.
  4. Toss in bell peppers, carrot, and zucchini.
  5. Season with paprika, black pepper, salt, and soy sauce.
  6. Add water or broth and stir-fry for 4–5 minutes until veggies are tender but still colorful.
  7. Serve hot on its own or with rice.
